14, November 2021 - Doha, Qatar: Doha’s leading lifestyle hotel, Mondrian Doha, is pleased to announce the highly anticipated opening of 12 Chairs, Doha’s most recent destination for a lavish caviar experience. 12 Chairs offers guests a one-of-a-kind extravagant experience, as sought after from the grandest of hotels from across the globe, to Mondrian Doha exclusively.
Tempting the senses with a mouthful of exquisite tastes and textures, 12 Chairs’ sophisticated perch will be the favorite destination for residents to enjoy the finest caviar in Doha. Reserved for only 12 guests, this signature experience serves up the dreamy pleasure of tantalizing taste with the utmost in attentive service, while immersing diners within a luxe environment.

12 Chairs Chef de Cuisine, Marcus Riot, has worked alongside Michelin-starred chefs in the UK’s most high-end establishments in London and Buckinghamshire, mastering the most complex cooking techniques, and developing his gastronomic imagination. Chef Marcus explains his inspiration: “At 12 Chairs we offer an intimate and luxurious experience, raising the bar on fine dining through extraordinary dishes and world-class quality products. All our creations are prepared right in front of the guest, who are invited to explore our complex gastronomy experience, while being introduced to the culture of caviar and sophisticated drinks. Inspired by the Japanese omakase tradition, 12 Chairs’ bespoke concept, combining exclusive ingredients as well as the chef’s creativity, will no doubt open conversation with guests, and elevate Doha’s dining scene to new levels”.
Among the fine delicacies available on the menu, guests can revel in a variety of mouthwatering Caviar specialties including the Caviar Pumb, with a selection of Caviar served on a ‘Mother of Pearl Spoon’. Choices of tastes range from the Baerii, boasting a soft and creamy texture with sweet, nutty, and savory notes; the Oscietra, golden brown pearls with almond and floral notes; Schrenckii, rare and complex with a rich nutty buttery flavor; and Kaluga Reserve, elegant and indulgent with a multiplex of umami, selected by the caviar master. In addition to many other exquisite Caviar treats available for guests, the Omakase menu stands out with choices of Salmon Crisp and Baerii Caviar; Smoked Salmon and Baerii Caviar Cone; Tuna Tataki, Smoked Yolk with Oscietra Caviar; Bluefin Tuna “Otoro” Taco with Oscietra Caviar; King Crab and Risotto with Kaluga Reserve Caviar; Poached Local Catch & Celeriac with Kaluga Reserve Caviar; Foie Gras, Ponzu & Beluga Reserve Caviar and Sorbet & Strawberry Caviar.
In addition to caviar, 12 Chairs’ menu includes a variety of amuse-bouches made from raw items and exquisite dishes prepared with ultra-modern liquid nitrogen techniques, including à la minute ice-creams, sorbets, and granitas, pleasing the most refined palates. A mix of imported and locally produced ingredients is used by chef Marcus, adding a subtle local touch to the menu.
Situated on the ground floor in the Frozen Forest lobby, 12 Chairs in Mondrian Doha is the first outlet of the brand to be opened in the Middle East.
12 Chairs is a brand owned and developed by C3, a cutting-edge food and beverage platform consisting of an array of limited-service culinary brands and licensed to Mondrian Doha. 12 Chairs’ chic and dreamlike design was elaborated by Shift Design, Doha-based design studio.
All Mondrian Doha outlets follow Qatar Clean safety, hygiene, and social distancing measures, including Ehteraz App at the entrance to the hotel for all guests, and mandatory face masks when entering or leaving all outlets.
